THE WISDOM OF THAI CUISINE

R-HAAN receives 2 Michelin Stars at Michelin Guide Thailand 2020

R-HAAN, Michelin Star restaurant in Bangkok serving Thai cuisine take home two prestigious star awards this year at the Michelin Guide Thailand 2020, making it the first Thai restaurants in the world to earn this accolade. R-HAAN upgraded from one to two-star ratings on Tuesday, November 2019 at the Bangkok Marriott Hotel - The Surawongse.

Chef Chumpol of R-HAAN is paving the way to a unique and gastronomic journey into the heart of Thai cuisine. The newly awarded Two-Michelin star restaurant in Bangkok aims to reflect how food has greatly influenced Thai culture and people.

R-HAAN combines the freshest seasonal Thai ingredients with the wisdom and essence of Thai culture to create an authentic Thai fine dining experience. R-HAAN’s philosophy can be derived from an old Thai proverb, “Nai nam mee pla, nai na mee kao”, meaning “there is fish in the water and rice in the fields.” The classic proverb speaks to the abundance of Thai food sources and ingredients all over the country, which is why R-HAAN uses 100% locally-sourced ingredients to create a gastronomic six-course dinner menu. Featuring modern Thai dishes like river prawn from Phuket, salted eggs from Surat Thani, and wagyu from Korat, R-HAAN offers both regional and Royal Thai cuisine.

Difference between one and two-Michelin starred restaurants

It’s every restaurateur’s dream to earn a Michelin star, and even more so when awarded two, or the top award, three. But what’s the difference between restaurants which have one or two stars?

Inspectors from Michelin Guide have a careful, strict process of critiquing restaurants. They visit restaurants anonymously and pay for their meals, so the restaurant staff, chefs, and owners are unaware Michelin inspectors are judging them.

Michelin Guide has kept the majority of their processes a secret, but they do go over five criteria:

1. Quality of the products
2. Mastery of flavor and cooking techniques
3. The personality of the chef in their cuisine
4. Value for money
5. Consistency between visits

Here’s what each star means:

1. One Star: high-quality cooking, worth a stop
2. Two Stars: excellent cooking, worth a detour
3. Three Stars: exceptional cuisine, worth a special journey
