"Rice"
The ingredient that has been highly regarded as the integral component of Thai people's lives since ages past, rice plays an important role economically and culturally, being like some aspects of national identity. At R-HAAN, the Thai Michelin restaurant, we have placed the selection and sourcing of rice in the high priority which demands care and meticulousness. Chef Chumpol personally selects 'Khao Mai Yasothorn', the special type of rice nationally renowned for its mild aroma, mildly sweet in taste and pure white coloring, cultivated from the most trusted farmers and providers with years of experience, to ensure that our guests would experience the national symbol at its prime.
At R-HAAN, we have, apart from Jasmine rice, '9 kinds of Thai Brown Rice' ready for your healthy and enticing meals. For 9 kinds of Thai Brown Rice, there are Jasmine rice or Khao Hom Mali, Khao Klong Doi, Khao Hom Nil, Khao Sang Yod, Khao Riceberry, Khao Man Pu, Khao Klong Ngok, Khao Sinh Lek, and Khao Luang.
Pak Waan or Melientha Suavis
Pak Waan or Melientha Suavis is a local vegetable that is highly nutritious. Popularly used in Northern and Northeastern Thai traditional cuisine, it is considered a source of protein, vitamin C, beta-carotene, calcium, and dietary fiber, which helps with digestion and promotes overall balance for the body.
Fire Ants' Eggs
Another important local ingredient from Nakhon Ratchasima province is fire ants' eggs, which are rich in protein, low in calories, and highly nutritious. It could be regarded as a reflection of Thai people's folk wisdom in sourcing natural ingredients to create various delectable menus. Additionally, it can also be a cost-effective substitute for certain types of expensive proteins.
"Red Snapper"
Red Snapper is one of the deep-sea fish that is highly sought after in the oceanic sources of Thailand. Chef Chumpol Jaengpai carefully selects this locally sourced Red Snapper from Ranong province, the national renowned provider of the famous fish. Red Snapper is low in fat and rich in vitamin B and vitamin E. It is used as one of the main dishes in THE WISDOM OF SUSTAINABLE SUMMER SAMRUB menu, to promote sustainability with exquisite texture and delectability.
